At FUGA, we love vibrant spaces, stories told through memories, and the roots that infuse our plates. So, for this new episode ofEntrée · Plat · Blabla, we’re taking you where cooking becomes a landscape of emotions: a place for passing things on, sharing, laughing, and remembering.
In this episode, we’re joined by Karine André @karineandre and Stéphanie Moquet @stephanie_mok, our executive chef. Together, they head into the kitchen to prepare a dish straight from Karine’s Malagasy roots: banana fritters.
A simple dish? Not quite.
For Karine, it’s the taste of holidays in Madagascar and impromptu afternoon snacks.
Stéphanie, on the other hand, adds a sweet and savory twist with plantains, a nod to the years she spent in Ivory Coast. She remembers the endless walks with her brother, the street vendors, and the scent ofaloko that permeates her memories.
Between the laughter, the precise movements, and the crackling of the fryer, two stories intersect. Two childhoods, two cultures, two women passing on their heritage.
