Opening in spring 2025. Laïa Monceau offers sunny cuisine that is both Mediterranean and Latin, fully integrating the codes of the 8th arrondissement: comfort, elegance and confidential spaces. Enjoy a green terrace and a veranda to enjoy a disconnection in the heart of Paris.

FUGA R.

Opening in spring 2025. On the 11th floor, perched above the roofs with a breathtaking view of the monuments of Paris. This rooftop was designed as a haven of relaxation on the roof terrace: outdoor kitchen, culinary entertainment, live music. The perfect playground for afterwork. This space is open all year round on request.

Marie Pacotte

Chef of the Francette floating restaurant since 2021, Marie Pacotte leads a brigade of 25 people and participates in season 15 Top Chef broadcast on M6. His cuisine, vegetable and refined, is synonymous with refinement and French elegance.

Francesco De Stefano

Originally from Italy, Francesco grew up in Naples, surrounded by the culinary traditions and sunny flavors of the Amalfi Coast. Enriched by his international experiences, he attaches particular importance to the aesthetics of his plates, where vibrant colors, generosity and emotions mingle. He is now the head of the Riviera Fuga restaurant, where he offers Italian-Japanese fusion cuisine.

Executive Head Chef and Fuga partner, Stéphanie signs all the group's catering offers and supports our Chefs on a daily basis. Trained in the kitchens of Michelin-starred restaurants, she relates on quality products, on the meticulousness of her work and on her audancy to offer astonishing dishes that will be remembered. Its great strength, sauces and broths!
