Biography

Executive Head and Fuga partner, Stéphanie signs all the group's catering offer and supports our Chefs on a daily basis. A graduate of the Ferrandi school, she worked at several Michelin-starred restaurants before joining the Fuga adventure.

Executive Head of Fuga Addresses

Stéphanie Moquet, a graduate of the Ferrandi school, began her career at the Cobea restaurant before joining La Table du 11 in Versailles as a sous-chef, where she contributed to obtaining a Michelin star in 2016. She met Quentin Garreau and Pierre Doublet, partners and co-founders of Fuga in 2021. Driven by their creative energy, she joined Fuga in July 2021 and at the opening took control of Francette, a barge at the foot of the Eiffel Tower and an emblematic place of the group. The following year, she passed the baton to Marie Pacotte, a finalist in Top Chef season 15, and became Executive Chef of Fuga, in charge of the gastronomy division.

Laïa is an hidden restaurant in the 11th arrondissement of Paris. Located in a historic building of an old distillery, at the bottom of a garden, with a vegetable garden on its roof. Laïa offers a cosmopolitan cuisine influenced by the South of France, Spain and Italy, cooked on an open fire kitchen with charcoal. Our barge at the dock is located in a unique spot at the bottom of the Eiffel Tower. We have recreated a liner boat atmosphere through three levels: the outside terrace on the penthouse, a bistronomic restaurant and an underwater wine cellar.
