2 Ecotable macarons for Francette!
The Ecotable label is a reference in the world of sustainable catering. It is based on a rigorous audit of 150 questions, designed to assess the environmental and social impact of restaurants. These questions explore in depth the 8 fundamental pillars of sustainable catering, such as local and vegetable sourcing, waste management, the reduction of CO2 emissions, or even well-being at work. Chez Francette, we took up this challenge with great determination, by providing a full month of supporting documents on our practices: supply bills, energy consumption, and many others.
We believe that the quality of the plate is inseparable from the product quality that we select and the methods we use. To do this, we work with committed suppliers who share our vision of agriculture that respects ecosystems, favor short circuits and local producers, in order to limit our carbon footprint and guarantee the freshness of our ingredients. Each dish prepared in Francette's kitchens reflects this approach: we want to offer our customers authentic recipes, while minimizing the environmental impact of our business.

We do not use any fish that are trawled or are considered endangered. All our meats are raised and slaughtered in France, and more than 30% of our fruits and vegetables come from environmentally friendly agriculture. We also work closely with the company Atypical, which saves more than 600kg of organic fruits and vegetables from destruction every month because of their appearance or size, thus strengthening our fight against food waste.
Ce Second macaroon Ecotable is a source of pride for the entire team of Francette and a guarantee of trust for our customers. By being labeled two out of three Ecotable macarons, Francette proves not only its ability to respect these standards, but also its desire to go a little further every day in its ecological approaches.
